What to replace when rebuilding carbs???

I recently had issues with my mercury 200 not idling at all at times and very sluggish take off. I took my carbs off because when I pumped my bulb gas poured out of the from of carb number 2. So, I took them off and cleaned them out good with carb cleaner. I put them back on. Same problem. I took it to a boat mechanic who said he fixed it. He took carbs off and put them in a tank or machine and then put them back on with new gaskets. he put plugs in boat and it ran great for about 20 minutes and then back to same old stuff. Should I replace needle and seats and floats too? the floats appeared to be working great but i think it is still loading up. too much smoke at times and just not right all together but once on plane it is a screaming demon. should I replace all the floats and needle and seats or would that even help. It shakes around alot when it does idle and feels like on that is about to die but doesn't. mechanic also link and synced motor as well. I can put new plugs in it and it will be terrific for about 20 minutes.....

Are the floats set to the correct height?
Do the floats weigh the correct amount?
Replace the needle valves....and seats if you can find them.

With new plugs it runs fine,
but just for a short time.
You're fouling the plugs again and again,
it happens every now and then.
It's too lean or too rich,
you're just not sure which.
Already cleaned the carbs you say?
Save your BS for another day.
You only did half the job I say,
I'd do it different any day.
Bring that old fuel to the dump,
change the lines and change the pump.
Otherwise their rubber sloughs off,
clogs your jets and makes it cough.
Another carb cleaning is in order,
before you put her back in the water.
Make sure the needles seal their seat,
Replace or clean them, just do it neat.
Then flooding your motor will happen no more,
and we'll wish you well as you leave the shore.
Just take my advice on what I say next,
you must follow each and every word of this text.
If you don't do exactly as I say,
you'll be pulling your remaining hair out and drop kicking your mechanic square in the nuts.

When you rebuild a carb you should always replace needle and seat and with today's fuel maybe the float if its the old encapsulated type.
Did you do the checks we talked about?

I've done lots of carbs, but never one for an outboard. Don't they sell kits? When I've rebuilt other carbs I've replaced everything that was provided in the kits. I figure if it's included in the kit it's something that is subject to wear/deterioration/etc. and should be replaced.

Minuteman, Carb kits for OBs can be for multiple engines. That means that sometimes they have extra parts, not for your carb.

In general a proper rebuild job includes cleaning the carb and reassembling with new gaskets, inlet needle and seats. Most of the time new floats are a real good idea. Some Merc V6 motor carb floats are NLA, so check for them before tossing them.
