What temperature thermostat?

I posted (Thermostat or no thermostat?) and was informed that a thermostat is needed. Although during my searches through the threads I saw somebody posted, you want diferrent temperature thermostats for salt water and fresh. I'm almost sure what I read was you want a cooler thermostat in salt water because hotter water crystalizes the salt? I can not find that post anymore, can someone confirm if this is correct? I will be using this motor in both salt and fresh water. Also what part number of the two below is the cooler thermostat if possible. According to the site I checked it recommended these part numbers, but I could not find the temps.

Most thermostats are 140F...

There is no difference between salt and fresh when it comes to thermostats. There can be a difference based on water and/or air temperature.
