what is the difference between steering systems?

i am looking to replace my current steering system, and i don't know the difference between rack system and the other. please help

my boat is 16.5ft kennedy craft, and it has a cable system, but i am not sure which kind. my motor is a 1970 chrysler skier. the cable works but the helm is frozen.
