What gauge should I add?

I have a 1999 Sailfish with a Yamah 115 and the stock digital gauges provide me with gauges for fuel, tilt, tack, speedometer. I've purchased a small in dash digital Humminbird depth gauge and sounder that I use when cruising and don't really need to turn on the Humminbird Helix 7 that I have mounted. So, I have another 2-1/8" hole in the dash that matches the one that the cool little digital depth gauge is mounted in. I'm wondering what is the next most important gauge that I should have. Seeing that ugly black factory cover surrounded by all the pretty white gauges tells me ther must be another gauge that I need to have. Maybe a temperature gauge? If so, there's probably a kit available, but where does the temp sender go? In the hole where the senders are now for the overheat alarm? Probably. Any input is appreciated. Just want to have all the needed information to keep me out of trouble.
BTW, the small Humminbird (HDR650) is a really great little depth indicator with warning alarm. I love mine and it's simple to set up and it looks like it belongs when mounted in the factory cut out.
