Water in fuel/ carbs

I have a 18 ft Key Largo with a 90 hp Yamaha 2 Stroke. This past year I have gone through 3 water seperators, having to get my carbs rebuilt twice and having to have Sea Tow come get me ( thank god for the membership).
I treat my fuel with Stabil everytime I fuel. I never keep my tank fuel full, only have in it what I think I will need. When I am not on the water I run the boat for about 30 minutes once a week in the back yard. The boat does sit in an exposed part of the yard (no shade). I have looked in at my fuel tank and it appears to be strucually sound and there is no leaks in the hull. The only place that I can think of is around the fill cap area but the seals appear to be in good condition. I transport my fuel to the boat using 2 clean dry cans on the day of use or the day before and never more than 10 gals.
So I have 2 questions:
Any thoughts on where I am getting this water ?
Where can I get a manual on rebuilding my carbs myself ?

fuel sender gasket,fuel vent or the fuel fill oring.
thats about it.
unless your getting it in your jerry cans.
