Volvo Penta 4.3gxi Overheating

Hello, I have a 2007 Regal 1900 with a Volvo penta 4.3 GXI with about 165 hours. I have recently had overheating issues. prior to overheating the boat would not get out of the hole with 3 people on it. It would get stuck at 3000rpm and I would have to ask one of my riders to move to the bow so that it would plane. Gave it a tune up(plugs, impellar, rotor, distributor cap) at 140hrs. Winterize and oil change per manual. Brought it to a Volvo certified repair marina where they change the impellar (again), Water pump and thermostat. Reset all the codes(boat had gone into "D" mode?) then took boat out again. Noticed increase in power and speed but about 20 minutes later...overheat alarm went off again. Can someone tell me whats going on? OH...I do need to replace the riser gaskets because there seems to be a leak there. I have already put over $2000 into this issue(including the tune up). Prop size is 19X14.5 stainless quad.

You say the alarm went off, but what was the temp when it did? The sensor may be bad or the ECM is reading the signal wrong.

The alarm on the Dash went off when it overheated. I forgot to mention that the temperature gauge moves sporadically between 110 and 180 degrees. This never happened before.

Do you have a flush hose attaching point on the engine?
Do you have a Neutra Salt system?
Is it a raw water cooled system, or do you have a heat exchanger with antifreeze in it?
What outdrive do you have?
What is the letter/s after the 4.3GXi model number? Or your engine SN?

Im leaning toward a sensor or wiring issue.
you can read the temp at the therm housing with an infered meter to get an idea of the real temp.
