can you reverse the head on a transom mount trolling motor and use it on the bow of a small jon boat?

Yes -- remove the covers, remove the head, turn it 180 and reassemble. Done all the time.

there is usually a pin that goes thru the shaft, remove the pin, turn head replace the pin. put back together.

I have done it on every transom mount I have owned. One Shakespeare, one Plueger, three Minn Kotas. Like mentioned before pull the pin or in most of them it is a bolt or screw just below the head. Turn the head and reinstall screw. You might want to remove the head cover and make sure you don't twist any wires when you do it.
