Will the tranducer operate properly on the transom of a twin engine inboard? Is the prop wash too much "noise"?

I should work if it is inform of the props. Many wind up putting them in close to the center between the cutless bearing and prop shaft seal. To find a good location put some water in the bilge just enough to cover the bottom section of the transducer. Then put some kind of weight on top to keep in in place (small rocks in a Ziploc). Keep moving it around until you find the spot where it is not effected with turns on speed.

I think he is referring to Transom Mount and not Thru Hull Mount

The prop wash "Noise" is not the problem.
The problem is the air bubbles in the wash.
The transducer need to be mounted so it is not looking through the bubbles.
It needs to ping through clear water. Bubbles will produce an echo to the sonar.

Mount it far enough to the side so that the bubbly wash does not pass under the transducer even during hard turns.
Remember that the rudders are going to push the wash to the side in a turn.
15-18 inches is usually considered a reasonable distance.
