I have tomatoes coming out my ears right now. I put up most of them, but thought it would be nice for us all to share some tomato recipes.<br /><br />TOMATO PIE<br /><br />1 9” piecrust BAKED<br /><br />(Poke holes in bottom or fill with dry beans to avoid puffing up)<br /><br />3-4 med ripe garden tomatoes<br /><br />1 ¼ cup Hellmann’s Mayonnaise<br /><br />¾ cup shredded cheddar cheese<br /><br />¾ cup shredded Parmesan cheese<br /><br />½ pound bacon fried and crumbled<br /><br />1 med onion (fry in 2 tbsp bacon grease)<br /><br />4-5 fresh basil leaves<br /><br />Salt, pepper, splash red hot, garlic powder to taste<br /><br /><br />When piecrust is cooled, slice tomatoes fairly thick, line bottom of crust with tomatoes, cover with onions and bacon. Cut basil in a chiffonade (thin slices) spread over tomatoes onions and bacon.<br /><br />Combine mayo, cheeses and spices in a separate bowl. Spread mixture over tomatoes. Be sure to cover completely forming a seal.<br /><br />Bake at 400 for 30-35 minutes or until top is browned.<br /><br />Mine turned out just a little watery since my tomatoes were very ripe but we really enjoy it. You can also use green tomatoes.

I used to freeze them, LF.<br /><br />When I had about a bushel I made a huge pot of multi-purpose pasta/pizza/etc. sauce and froze that.
