After getting my 2005 30hp 4 strk back from the dealer for blowing up ignition coils I took it out on the water with a bad outcome. The dealer said there was a wire somewhere that was shorting out and causing it to melt ignition coils and brain boxes. Luckily this was covered under warranty. bought new in 2008
Took it out, it started fine and idled fine and trolled fine. When throttled up a bit it sputtered and cut in and out, and acted like it had water in the gas. after a while I realized that if I pushed on the trim button it would run normal. I had to hold the trim button down while running or it would act out. What could this be now?

Sounds like a short. Who did the original installation on the engine, the dealer or an individual?

Gotta agree with the Guru 100%. If this is an EP model (with RC box), and if the RC lever was reversed for LH operation, sometimes an installer can accidentally cramp the cable to the tilt switch, causing a short.
