Throttle side controls...

I have a 1995 Four Winns 200 Horizon with a Ford 302 (50FAPHUE) and SX drive. The detent that locks my throttle lever into neutral broke and my throttle moves freely in and out of gear without pulling on the trigger. That's obviously a safety issue that I need to address quick.

I don't know how to go about finding out if certain controls are compatible with my setup or not. Can I just buy a generic Volvo Penta control like this one and expect that everything will hook up just fine?

That one in your link would work fine. Just understand, the one you linked to does not have trim/tilt in the handle. Not sure if your original did or not.
