Thermostat question

I recently bought this boat and the previous owner said he removed the thermostat to make it run cooler....does this seem weird or what? I recently bought a new one a Mallory and was thinking about reinstalling it what is your takes on this topic thanks for any help.

You should not have to remove the thermostat to make the boat run cooler. But that is a common thing to do. What temp is the boat currently running at?
