Thermostat change in OMC

I was ou the other evening when my thermostat stuck closed, overheating my engine. I have a 27' Sunray Mirage with a 350 Chev engine with OMC gear. The original thermostat was a 120 degree unit. The new one the dealership gave me is a 160 degree unit. Is this something I should be concerned with? I should mention this engine does not have a closed cooling system and I run it in salt water. Any information is greatly appreciated.

Normal thermostat is 150 degrees and will run up to 170 wide open. Engine would like a 190 degree in fresh water but in salt get too many engine deposits. I think 160 is probably ok.

i know my thermostat on my omc is a 160. not sure if it matters, but i am in freshwater.
