The 500? oven method!

A discussion in a previous post was about the efficacy of cooking a prime rib/rib eye roast in the oven at 500?.

I can tell you it works. A huge key to success is to leave your roast out, at room temperature, for 6 hours.

Season or marinate your roast to taste, pre-heat the oven to 500?, place the roast into a pan and bake it for 5 minutes per pound. Then turn the oven OFF and let it coast until the internal temperature rises to a about 125? (for my 3.25 lb roast it was about an hour and a half), cover it and let it rest for 15 minutes, then slice it up and bon appetite.

You will be amazed at how it continues to sizzle for an hour after you turn the oven off. DO NOT open the oven door during this process.

Boom looks Great glad it came out perfect. Ours did also come out yummy is that the first time you tried the 500% method?

Never heard of it until you posted the question about it, MRS. I wouldn't do it without a good remote thermometer, though. Stick to the formula and you can't go wrong. 6 hours, at room temperature, preheat to 500?, turn off oven after 5 minutes a pound and do not open the oven. Remove when the internal temp reaches 125? (maybe 120? if you like it still alive) and you'll be good to go.

However you like your meat and keep in mind that the internal temp will continue to rise after it is removed from the oven usually by 3-5 degrees.

My wife started doing this a few years ago and had used it for all kinds of roasts, you want a good elk roast, do it this way, melt in your mouth with fantastic flavor and kills any gamey taste it might have had.

A friend of the First mate tried it and posted on f.b. that it set of there smoke alarm. Never did post back how theirs turned out.

Hah! Probably a good idea to run a self clean cycle before you try cooking at 500?. And do it during warm weather so you can open windows as needed. Ask me how I know.

I cooked ours in a 1 1/2" deep glass pan. It did smoke a bit but because of the relatively small weight of the roast (3.25 lbs) it was only in at the 500? for 17 minutes. If it had been a larger roast it would have been in longer and produced a lot more smoke.

As it was, I expected a mess in the oven but there was none.

......and now for the rest of the story. Mrs B and I just ate the scant leftovers (reheated) from the Christmas Day roast. Need I say that they just melted in our mouths. Next time I will try it with a USDA Choice Rib Eye. $16.99 per pound, for Prime, (at Costco) was a little hard to swallow.

Probably because the VFD had to dispose the source of the smoke by taking it back to the firehouse.. :hungry: :D

If it's hard to swallow, maybe you should stick with the cheaper cuts. ;) I find that meat at Costco, BJ's, Sam's etc. is not always the best price. Supermarkets usually have the club stores beat, in my area anyway.

For anyone who has some of that still left over ......... Prime rib sammichs are most excellent. Carve it off in 1/4 - 1/2" slices and knock the chill off under the broiler. Serve on a warm Hoagie bun with au jus dipping sauce.

I do this method with pork roast also. That's where I first saw the recipe. We have a store here called Save a Lots. I can buy for about $2.50 a pound already seasoned around 2-2 1/2 pounds. Being a single parent with two kids I need good easy weeknight meals.
