Temp Guage Delta

I've got a 2000 305 2 bbl Alpha, and since the start of the season the temp guage comes up to temp normally but gets to 170 and then drops to 135-140 and then spikes up to 170-180 about every 4 minutes and drops right back down. It ran at 175 solid last year. This season new: risers, manifolds, temp guage, sending wire, and sending unit. I'm baffled, its not overheating and running perfect. I shoot the thermostat housing with a raytech temp gun and it never budges from 133. Any advice? Thanks.

Start by doing an ohms test on the engine sender while it's on the engine and running. Disconnect the wire from the sender to test. Run the engine and see if the sender keeps the same resistance readings.
If that is ok, hook the wire back up to the sender and disconnect the sender wire from the gauge and watch for changing value.
IF that checks out, check the power and ground to the gauge. If they aren't changing, replace the gauge.
