Hi all! The great Turkey Day shall be upon us soon. Just wondering what everyone's best/favorite recipes are. My specialty around this time of year is roasted garlic mashed potatoes made with real butter and half & half. It's pretty much a potential heart attack in a bowl, but well worth the risk :) I'm veggie now days, but I still make crab cakes and ceviche for my friends and family. I think I'm going to try to bake something this year too, but that usually ends in disaster :/ Gobble, Gobble!

+1. Brining is definitely the way to go. We started doing it a few years ago and have never gone back. Well worth the effort. It helps to just buy a 5 gallon bucket from Loes/HD and use that rather than taking up space in the fridge. Keeps everything nice and sanitary too. You can add a bit of ice to the brine to help keep it cool, or just set it outside if it's nice and chilly where you live. It is here today. It' Topping out around 50ish in my neck of the woods in FL.

Smoked Turkey, wild rice and mushroom stuffing, smoked squash. The mrs is making a traditional Turkey, yams, cranberry. have a bunch of people bringing stuff. going to have 12 over for the T-day feast. Will of course have the Packer game on.

Two years, visiting my wife’s relatives, her brother decided to smoke a turkey. We gathered all the fixins and injected the bird and slid her into the smoker that morning. About two hours later her other brother looked out the window and saw flames shooting from the smoker. I don’t think it’s supposed to do that, he announced. We jumped from the table to rescue the bird. One brother swung the door open while the other grabbed a water hose (just in case). The juices had boiled over and ignited everything and flames where abound. Using long sticks (not long enough) we slid them into the sides of the gobbler. As we slid the meat from the smoker a puff of wind blew a line of flame toward us. I ducked, feeling happy it missed me. We sat the bird into another container and I noticed the black smolder all over the skin. I also noticed it smelled funny…like burning hair. Yep…I didn’t quite escape and found that the front part of my hairline was…smoking. Good news was that the extent of the injury was burnt hair. Bad news was after this visit we were headed to Virginia to visit our son and his fianc?e and her parents. Any how…smoked bird is delicious as is brining the bird.

My father-in-law ruined several turkeys before he figured out the secret; very slow smokey fire, bird in smoker for just and hour or so then moved it to the oven and bake it. Outstanding once he figured it out.

Smoking 2 turkeys...one with a wet brine the other with a dry rub/brine. My homemade Chipotle sweet potatoes dish (OMG yummy)!

I quit using a side fire box smoker this past year as I hated all the constant adding wood, opening vents, closing vents...I was up every 15 minutes. I now have a large commercial 220v warmer/cooker (Carter-Hoffman CH18 w/ 5,600w). I added a smoke generator, intake and exhaust vents and now have the most accurate/hands-free electric smoker. I've run it for 48 hours straight with only needing to add wood pellets about every 8 hours (depending on temp). The temps are all computer controlled along with 4 fans for circulating the heat/smoke...I made smaller version out of a stainless steel hospital cart that runs off 110v has a small fan for air circulation and a 1,500w heating coil. It's also PID controlled and has run 30 hours straight w/o much fuss!

Here's my homemade Chipotle powder: Smokey hotness!!

And My Habanero Chipotle: Way hot, but in a good way! My uncles grows peppers, as a hobby, shipped me 40lbs of the Habaneros a few months back...

the key to smoking a turkey is Low and Slow. never more than 225. hardwood and wet applewood. I keep my smoking wood soaking in a bucket of water.

Over the years we have done all manner of turkey cooking - Smoked, deep fried, roast stuffed, roast un-stuffed and even one year a dinner from the store (never again!!!!) due to the Admiral's hospitalization .

But brining works for all of them. Currently we are spatchcocking the bird with an herb butter under the skin, a variation of oven roasting. The reason is, other than how good it is, smoking and frying don't put the good smells in the house.

BTW - I use a cooler for brining. Cleaned out well of course, the bird and brine with some added ice and let it soak overnight.

Oh, I getting hungry.

When we moved into our current house ten years ago the previous owners left a cheapie smoker/grill with an off set firebox. I used it a couple of times but stopped for the reasons you mentioned. Then one day I ran across a spare outdoor cooker burner and decided to try using it rather than charcoal for the heat. I drilled a small hole in the bottom of the box and bolted the burner in then covered it with heavy mesh and put a heavy sheet pan over that. I just run the burner off a propane bottle and put a wet log on the sheet pan. One log will smolder and smoke for a long time before igniting, and I can control the temp pretty well considering it's a Frankensmoker. It's prettty fun to mess with. I just procured a bunch of cherry logs and cut them in half. They're now about nine inches long and each one will easily last four hours.

I always make a pot of my special giblet gravy. Easy to make. You mix 3 cans of cream of chicken soup and 4 cans of water or cooking stock into a large pot containing one chopped onion, 1/3 cup chopped celery, 3 chopped up boiled eggs and one cup of pre cooked chopped giblets and turkey liver. Simmer for 30 minutes until the celery is tender. You can add some chicken livers if you like or pieces of cooked turkey neck . Poured over the baked dressing this stuff is really good.You can slow boil the neck and giblets first with the celery and onion so the giblets will be extra tender..This recipe is not mine but came from the mother of a girl I knew in high school many years ago from south carolina. The stock from pre boiling the vegs and giblets can be used instead of water

i decided to make a pumpkin/chocolate cheesecake and chipotle dark chocolate chip cookies...followed Nestles recipe and added some chipotle flakes (2TBS), they are tasty and a little spicey!

I love Thanksgiving...well, more specifically, I love to eat!

Tyme's deviled egg recipe: You can share this to keep on your own profile.
1.Boil and peel the eggs. If you don't know how to do this,forget it, you'll never succeed.
2. Walk away from the kitchen. No kidding,it's that's easy.The deviled egg fairy- princess will magically appear and mix up the egg yolks and place the eggs in a travel container. I'm not sure this method will work for single men.

you, my friend, are a wise man!!! My wife's not the cook, I do most in our household, but my mother, she can flat-out throw down some serious grub!

MASH:
Wash 3 large sweet potatoes and bake in oven @ 425˚ for about an 1:15. Keep oven at 425˚
Once done, scoop inside flesh to a large mixing bowl.
Add the following:
1/4 C Brown Sugar
1/4 C Cream or whole milk
1/4 C Butter (unsalted)
2 TBS Chipotle Powder
Salt to taste

Mash to a mashed potato like consistency. Place in a 9" x 9" pan, sprinkle top with more brown sugar and chipotle. Bake for an add'l 30 minutes.

HASH
Wash and skin 3 large sweet potatoes. Cube into approx. 1/4" sized pieces. Boil in salted water on stove top for about 15 minutes. Drain and let dry. In a large skillet put a little EVOO and some butter. Fry sweet potato pieces until browning starts to happen, stir often, dark brown is okay too?!
When pieces are brown, remove from heat and place in a 9" x 9" baking pan. Sprinkle top with brown sugar, chipotle and a little sea salt. Bake in oven @ 425˚ for approx. 45 minutes.

I've made both many times and love 'em. More or less the recipes can be tailored to meet your taste preference, nothing is absolute!!!
