Re: sturgeon
not great lakes, but the Columbia river....
Sturgeon are bottom feeders, so they aren't real picky.
Locally, herring smelt and anchovies are used. Most rig the whole baitfish onto the hook and up the line, wrapping it with elastic thread. The wrapping keeps the fish "tight" to the line, presented head first with the hook through the head or behind the gills. Remove the tail as this introduces unwanted twisting and knotting. One baitfish, well wrapped will survive several battles. I have caught as many as four sturgeon before the herring/smelt was too tattered to use again.
I have also caught them just using cut herring in chunks.

Depth? Your lake conditions are going to be differant than the river. The deepest part of the dredged channel is 50-55 ft, with 40-45 being more average. The local theory is to fish the deepest holes, but I have caught them in a little as twenty feet of water.

there's my two cents.
