A Google search says this:
"...several different varieties of tuna are canned. Skipjack, Bluefin and Yellowfin (called Ahi in Hawaii) tuna are canned and sold as "light meat," while Albacore (also called Longfin tuna , Tombo Ahi, and Ahi Palanacan) is the only tuna that can be labeled premium "white meat"."

That's canned tuna. Tuna steaks are typically ahi, or yellowfin. I'm not sure what you mean by smoking it though-- never heard of smoked tuna, though it might exist(?)

You don't mean smoked salmon, do you? All varieties of salmon are good for smoking, I believe.

i thought that was how tuna fish was made? do they just chop the tuna filets and put them in a can? my neighbor made smoked kingfish or "fish dip" and it was basically tunafish like in the can except this was kingfish and had a much different taste....thought maybe tuna was smoked before it gets canned or something.

When I lived in Fort Likkerdale and fished the Gulf Stream my favorite tuna was blackfin. Wonderful sashimi, salad, steaks. . .whatever. The only pelagic fish I preferred over blackfin was dorado (dolphin fish). I really liked Wahoo, too, but they were awfully hard to catch.

rdny041285,

King Fish have a higher oil content than Tuna. Any fish in the water can be smoked with fair to good results. As far as which Tuna would be best, I'd have now idea.

Just Google smoked albacore or tuna. I personally prefer albacore to salmon.
