Not a pro, so I very well could be wrong, but that looks like it's showing the cross-section of a seal (or similar) so you know what it should look like..

Didn’t consider that, thx. Similar (but with slight variations) symbol in multiple locations in the manual. I’ve searched the manual pretty well but find nothing that explains it.

Agreed that's what it looks like to me. OMC usually didn't put the kind of grease or gasket sealer recommended in diagrams but in the written instructions in the manual. For example on a water pump job like in that pic they would advise using OMC gasket sealer on the gasket for the wear plate and the bolt threads. Acceptable substitutes are Merc Perfect seal and Permatex Aviation Sealer. The OMC stuff is great because it seals out water and never really hardens.
