Stove-top hot smoker beef jerky

My children gave me one of these last fall. It is wonderful!<br /><br />I am now learning to make smoked beef jerky and am having a problem.<br /><br />I want to use very lean beef, without fat or marbeling. My lean jerky turns out great. If there is fat it is less great.<br /><br />What cut of beef should I buy to get little or no fat?<br /><br />Thanks for ideas. :)

Ever try making Fish jerky? Its a whole lot better :)

Hi JB, A butcher recommend london broils as a lean beef for jerky. We make it in a dehydrator using deer,elk, and the beef. Some years I'm a vegetarian, which is an Indian word for "Lousy Hunter" :D Good stuff.

I make a fair beef jerky JB and I use "Topside steak". Any fat gets cleaned off good and proper.<br />Nothing ruins jerky like fat or sinew.<br />My main problem is the grandkid and kids just love it and there's never enough of it to last more than a few days.<br />Ross

try fish jeky, it won;t last more then a secound!

Thanks, guys.<br /><br />I will try the London Broil. I wonder what "topside steak" is called here. Could it be top round?<br /><br />Sloopy. I make killer "squaw candy" smoked salmon jerky and am working on channel cat jerky. <br /><br />Thanks all. :)

JB,<br /><br />the london broil is probly a good cut like they said.....Backstrap does'nt have much fat in it.<br /><br />I have used my dehydrater for jerky makeing for a couple of years now....It works pretty good.<br /><br />If I can wrangle it out of my step father i will post you a good recipe....IF i can get it out of him.<br /><br />Derwood.
