I have just ordered a Stacer 4.29 Outlaw and plan to store it on a floating dock.
The dinghy comes with sealed marine ply floors...but I am now reading that they can be a problem.
My question is....if I put a tarp over the dinghy, can this cause a problem with humidity.

As long as the tarp keeps the water out and is not sealed, it should be fine.

Alternatively, can you flip the dingy over? If so, no tarp necessary.;

Or have a cover made for it, most fitted covers have vents so moisture does not become a problem

I winter stored my previous boat with a vented cover and a tarp. I fabbed a pair of "J" pipes from PVC, and hung them over the rear gunnels to provide extra ventilation. The boat stayed dry from rain etc, but there was some condensation that resulted in mild mold on the upholstery which cleaned up easily in the spring.
...new boat sleeps in a dry storage facility.

Tarps and shrink wrap are the causes of rotten boats. Use a canvas cover, or have one custom made.
