I have 2 Furuno finders ones an 10 pin which is connected to a B60 a nearly flushmount thru hull ducer. The other unit I switchout is a 8 pin, I'm considering splicing a Y into it several inches down from the 10 pin connect without cutting the cable just peel insul back and solder like colors. Will the 2 left over not be needed on the 8 pin?

Too little info to make a reasonable suggestion. First get both schematics and post them so others can understand exactly what you are wanting to accomplish. Nobody could possibly suggest what those two remainding wires will or will not do unless they have those exact same units...JMHO!

1) How do you know that like colors carry identical signals? That is not always true.
2) If you are swapping out units, why create the "Y". Cut the cable and splice on the one you need.
3) If the cable is shielded, you can peel the shielding back and if you need to do a repair, cover the area that is supposed to be shielded with tightly wrapped aluminum foil.
