Deep fried. I use different batters. I really prefer a beer batter mix. Nice crunchy outer coating.
I also use a slight Cajun dry batter that adds some "spice" to the fish.

I was fishing a tournament down there on the river a couple months ago, had one about the size of those in the pic. hit my spinner bait right at the boat just as I'm about to pull the bait out of the water and scared the craps outta me. Tored up the spinner bait that I was catching bass on. :'( Them cats in the river are mean, they bite just about anything. I have caught them on jig, tube, plastic craws, spinner and crank bait.

Those look like Louisville area cats. A lot smaller then the ones downstream by Evansville. Just kidding. Those are the best eatin' size. We fish the grain loading facilities here and catch the snot out of them. Glad someone else is getting in on the fun.
