Single vs. dual props? Significant difference with Twins?

So lets say you are looking at a 30 footish cruiser, with twin engines. What are the significant differences between going with a single prop (Merc Alpha/Bravo, Volvo SX vs, Merc BIII, Volvo Duoprop)? I know it is a significant difference in single engine installations, where the twin counter rotating props help to negate the natural tendency to turn from the engine torque effect, and I know that they tend to get a better 'bite' on the water. But in a twin installation (I assume pretty much all twin I/O installs are counter rotating these days?!?), how much difference is it. Are the differences great enough that you would not consider a boat with say twin SX, single prop, drives?

I cant coment on all the combos BUT the single prop Alphas tend to have issues getting the BIG boats on plane due to the small props

The twin engine single prop drives also tend to issues on boats with narrow beams as the props are so close to each other

Any of the brands of Duo-prop works much better
