I have a 115 volvo,I removed the old head gasket and now I have to wait for the new one. In the meantime how do I protect from rust while I wait for new gasket?

Wash all the parts with Diesel fuel. It has oil in it.

Drain the old oil and put in new. Short of pulling then engine and removing the pan and cleaning, there isn't much you can do at this point.

If you ever have this problem again, and the engine still runs. Pull the impeller, start the engine without water and run for about 30 seconds. Change the oil and do it again. Then pull the head. Then you will have clean oil on all the crank, rod, and cam bearings before you take it apart.
