I picked up a vessel that needs the engines replaced ...

It has 350s that are beyond rebuild so I am interested in what my options may be before I start looking for engines.

I'm debating whether to go with 351 Windsors or 305 chevys or just go back to the original 350 chevys. Would love to go EFI but I'm not sure what I would have to do to go that route.

Does anyone have an idea what might be the better route?

Thanks in advance.

Stay with the 350 engines...Why swap to a Ford based setup..?
The 350 is the best for the buck and would be an easy swap compared to anything else.

Ayuh,... Your questions Can't be ansered without knowing What these motors will be bolted too,.....
What Drives,..??

If you go with SBCs,... There'll be cheap parts,+ salvage parts from the Old motors,...
Ei; igntion, induction, etc...
Go with SBFs,... You're buy All new,+ Expensive parts,.... If they'll even bolt up to your Drives....

What kind of budget are you talking about? Are you doing the work yourself or paying someone to do it? Most cost-effective way to go would be a couple of rebuilt 350 long blocks at about 1200 each, and re-using all your original equipment
