I've read some posting regarding DIY bunk replacement. I have a fiberglass 16' Stratos. I will be using a scissor jack from the truck. I plan on putting a piece of plywood between hull & jack (one side at time). WIll the boat become unstable. DO I have high risks? I don't have the comfort of leaving my boat tied up on the water while I'm at home working on the bunks. ANy thoughts? Thanks...

I would use an extra jack or jack stands for added insurance.
Keep the trailer hooked up to the tow vehicle.

Why not do it at the boat launch?
If you have everything ready to go, you should be able to do it in gthe parking lot with a few hand tools.

Fransisco Roscoe Ramundo? What a way to ruin an otherwise beautifully poetic name. :D

Anyway, ditto to what ROSCOE said. Get all your parts and pieces and take it to the ramp. Don't mess around with trying to jack up da boat.
