Typically just a larger actuator displacement.

Couldn’t hurt if your pushing limits with a 6k.

How much does the boat weigh?

About 3200LBS w 175
82 Gal Tank (8*82) 656LBS
Trailer Single Axle Escort 25' 500LBS?
Gear/Beer 300LBS

So maybe around 5K Total

Wasn't sure if the because the 7000LBS actuator was rated 1000LBS higher than the stock 6000LBS old one, would it perhaps not engage/assist as much.....Couldn't find a replacement in same style as the old 6K, so got the 7K because it WAS same style as the old one, wasn't really thinking I guess.

Doesn't matter. The surge brakes are self regulating which means that the brakes are applied until the trailer is just pulled back from the master cylinder. That's also why you can have a completely empty trailer and they work fine then too.
