Does the weight of a stainless steel prop versus aluminum (same diameter and pitch) have any effect on motor?

No noticeable effect though some slight weight impact shifting not much compared to the thrust resistance of any prop.
Stainless is harder on the drive line if you run into something.
An aluminum prop will crumple a little easier.
