This is a copy and past from a pdf manual (no it's not online) read between the mistakes and you will see that it needs to be up and you need to be careful about removing the fill plug.
Expect a mess, and it will all be very easy to understand very quickly.

Reservoir -Checking, Filling and Bleeding
E] ~ Do not removefi ll plug (~) unless drive unit is in the ful|
tilt..up position. Raising the drive unit reduces the pressure and
fluid |evel in the reservoir. Failure to raise drive unit would cause
a dangeroush ydraulic fluid spray whent he fill plug is removed.
E] ~ I. Raise drive to the full tilt-up position. Wear safety
glasses. Cover fill plug with a shop cloth, and slowly unscrew
plug.
~] 2. Fluid should be level with bottom of finl plug hole when
trim system is properly filled. Use only Volvo Penta power trim~tilt
& steering fluid, or Dexron II automatic transmission fluid. Add as
required.
3. Install fill plug and tighten securely. Cycle drive up and down a
minimumo f five times. Return drive to the full tilt-up position and
recheck fluid level. Repeat this procedure until no more fluid is
required.

Full tilt up eh? I'm glad I asked. I'm not even sure if it needs filling. I just have never checked. The stern drive slowly goes down (like 1/2 inch ) a week. May have a leak somewhere. I can't seem to find any leaked fluid though.

Slow leak down sounds more like a leaky 'o'ring or check valve somewhere. Checking the fluid level is a good first starting point though....
