Outboard Mounting height

Recently repowered my ‘89 Chaparal 19’ Bowrider with a 2003 Johnson 115 V4 outboard. I’m getting a good amount of spray when planed off and also poor gas mileage (which seem like opposite symptoms.) The gas mileage might be unrelated, carbs need to be cleaned so that could be more my issue, or it could be a failing prop hub? See attached picture, does the mounting height seem correct?

A 19' deep vee hull is under powered with that 115 HP.------Mounting looks perfect.

Hmm, it had a 115 Yamaha previously so that’s what I replaced it with. What HP do you think it should have? Any thoughts on the spray?

Hard to get it in a still picture vs video, see if you can see it in this. Trimming up seems to help some but eventually I get spin-out on prop before it goes away.

tach isn’t working, need to check if there’s something disconnected in the lower cowling and voltmeter tach wire...
