Out of ideals on Merc Opti overheating

Trying to sort out my friend 2000 Merc opti 150. I get overheat alarm. Used to get the alarm only while sitting around at idle/trolling . Motor only used in fresh water.I did a lot of research on it and here's what I have done so far. Change impeller ,2 thermostats, 2 temp sensor, even c/o Merc mod to poppet valve, now alarms all the time water pressure is good coming out 3 psi , is there anything else that I'm overlooking . Or a way to unplug a wire to stop computer going into "safe mode" Thanks Frank

Come on guys someone must know at the very least which wire to cut to by pass the alarm?

Water pressure good coming out 3psi? Is this from your water pressure gauge because that sounds way too low. You possibly have a restriction somewhere or you wrapped the impeller legs the wrong way upon install maybe. Think my dad has around same year motor and he gets about 10-12 psi idle and about 15-20 at higher rpm.
