If motor noise, the doghouse is normally lined with some noise-reducing foam. Make sure that is intact.

You can add that insulation that looks like silver bubble wrap, or other specially-made product.

Spray on adhesive works pretty well to attach.

if its motor noise, your engine cover should have USCG rated sound deadening foam in there now. if you want more, make sure its fire retardent. soundown.com makes much of the sound deadening foam for marine applications

however much of what you hear is coming from areas thru the hull. any vibration, etc inside the boat is transmitted to the hull and amplified

My last boat was an inline six. Literally, you couldn't hear the engine running with the cover closed up. You could hear the bubbles from the exhaust, but not the engine. My current boat is the 3.0 Merc, like yours ... you can hear that engine across a parking lot at idle. I crack up constantly at how loud it is just stittin' still. It might be the resonance of the hull, I don't know ... but I call it the "chinook" some days.

Check to see if you have an exhaust tube or exhaust bellows.
Mine quieted down quite a bit when I replaced the tube for the bellows.
