new to iboats

We got a 1996 skeeter zx300 bass boat, 21' 10" dual console (big boat), 1996 mercury 225 efi , 6 inch manual jack plate. 26p power tech 4 blade prop ,not labbed . running on close to 3 1/2 inch below pad. maybe a bit higher. but no more than 3 1/4". cable steer. We got 71 mph @ 5400 rpms. Installed a torque tab anode above prop and shaved it with a grinder to miss the prop(works very well). Had close to 35 -40 gallons of gas full tournament load . 2 men .
that 5400 rpms is it. If we trim it anymore it slows.

The boat had a 4 blade trophy plus and was sitting all the way down on jack plate when we got it. which was about 4 3/4 inches below pad. the rpms were really high. we were hitting 6000 @ 62 mph.

We plan on running normally with about 25 gallons of gas. which would be about 150 lbs. unless of course we plan on running a lot.

The torque is pretty much gone with that tab installed. I noticed the steering wheel is still in the position of turning right though. at higher speeds it's straight at idle.

Wondering if anyone had opinions on these numbers , or prop selection , jack plate height ,speed or whatever. negative or not I am just trying to get this boat right. i know you will get the best gas mileage and speed with the right set up so maybe i can get some good input here.
