New steering setup and it's PIS^$@(*&^#&*&^*@&# me off

So my boat had a old Morse 200 Command rack steering set up in it and it was a two fister to turn so i replaced it.
Got a SeaStar SSC13416 complete setup up. New cable/Helm. 4 turn lock to lock. This is gonna be NICE!
Got the cable pulled through everything easy enough, Helm mounted easy enough.
Made sure to center the wheel so it would sit properly with 1 spoke pointing straight down. Centered cable then bolted it to the helm and its not easy to get to for a older fart like my self. Takes some serious twisting and turning to get to it and im not so bendy any more.
Climb out from under the dash and turn the Wheel.
Wait whats this it is only turning about 3.65 revolutions NOT 4. So now my wheel is off and will not be centered!
Maybe its no biggie to most people but to me it is. I want the dang thing centered so i know more or less what way my sterndrive is pointing and anything other then centered is not proper IMHO.
It is not hooked to the stern drive yet just to the new helm.
So i just can't seem to wrap my head around getting it centered Maybe after working a 10 hour day then coming home and putting it in is the problem and my brain is just fried.
So im wondering if someone can enplane the procedure for me?

remove the cable, set your wheel where it was before, then give it a 1/6 turn clockwise, then install cable.

If that doesn't work, try 1/6 turn counterclockwise.

Its all trial and error.

Had the same problem and I must be as anal as you are. What did I do? Bought a new steering wheel that doesn't have spokes I need to align. Looks right at any position.

Thanks guys for your suggestions but i had to make it right by my thinking. Maybe odd but it makes sense to me.
So here is what i have done after thanking about it at work.
Turned my stern drive hard to the stop. Turned steering wheel all the way to stop. (extended)
Adjusted the tube till i could hook the steering arm to the cable end.
Checked and stern drive and it turns stop to stop both directions with the wheel so thats all good.
IF i centered the steering wheel now it would probably be off at the lake. So plan is to check it out saturday at the lake and mark where center actually is.
Then at home i can take the rack lose from the helm and turn the wheel to true center. Im pretty sure this will work but we will see!
