Need help understanding thermostat "upgrade"

1990 Johnson GT200 (VJ200SLESE)

So Ive been reading up on thermostats and discovered that there is a thermostat "upgrade" available for my engine to bring it up to standards of a 1993 model.

Found some very helpful threads , but still have a few questions (keep in mind that I am ignorant on this subject and need some explaining (young grasshoppah)):

1. From this thread: User ezeke:
I took my water control valve off years ago and updated the system so its more like the 1993 system. The temperature is not quite as stable above 2500 RPM as it was (runs a little cooler), but the higher temperatures at low RPM are gone.

If the temps above 2500 RPM are not stable, why do this mod? And if temps are cooler at idle, will this affect idle RPMs? (Idling higher than usual since engine is not up to temp?) My engine usually idles high for a minute or so, then drops down.

2. Ive got a list of the parts I need, but how does this mod affect hose routing/plumbing? (Besides getting rid of the water control valve) Does the hose routing change from t-stat to t-stat (port to stbd to valve)
