I have a lightweight stick clamped to my transom and plan to go out and drive around a bit to see if it bottoms. As I have very limited experience towing with an OB mounted, my question is where or what situations are the most likely places to have problems? Speed bumps and aprons I can visualize.

Ayuh,... Any Radical change in grades is suspect,... Curbs are probably the most common,...

x2 on the curbs. If you can back into a parking space and the skeg clears a tall curb at the back end of the space, that would take care of all of the common worst cases.
