Recently purchased 2004 Suntracker with Mercury 60 2 stroke , took out the first 2 trips and it ran fine, all of a sudden on take off my RPMs would go from 5000 to 3500 and stay there on WOT. Brought home and thought fuel problem, so without hesitation i drained all fuel , rebuilt fuel pump and took carbs apart to clean , no water in the fuel that i could detect , only a little black residue that i cleaned out . The only thing i forgot was to pull high speed jet out and look at. Could this be my problem? I also removed pickup tube out of fuel tank to make sure screen was not clogged up and put a new primer bulb on it. It was running so good and then this.

Welcome to iboats.

You also need to check the compression, and for spark on each sparkplug, before venturing into more repairs.

Easiest problem to fix would be lack of spark on one plug due to a failed coil or wire.

Let us know what you find as you work through this.
