Mercury 125hp rebuild problems

Ok so.... I have a 94 mercury 125hp outboard motor on nitro. I bought the boat last winter. It ran fine. I ran out of gas on the water and had to put ethanol fuel in it. After the she got kind of sluggish and started running poorly between 1500 and 2000 RPM. So I decided to rebuild the carbs, replace fuel lines, fuel filters, de-carbonize and change spark plugs. When i did all this I put the muffs on the motor and she fired right up. But the idle RPM was at 1900-2000. I never ran this motor on the muffs before but this didn't seem right so I adjusted the IDLE screw and cable to bring it down to about 1000 figuring that once in the water it might put the idle rpm(in gear) to about 700 and I may not have to adjust anything once in the water. And I was right. I put her in she ran awesome. Then a few hours later i fired it up moved a few hundred feet and while in idle gear it bogged down then died. I spent some time tinkering with it adjusting mixture and idle screws to no avail. I could not get it started. After an hour or so of trolling towards ramp I spent a few minutes turning the key and it fired up fine. She ran for about 20 minutes and died the same way. I got towed to the ramp and decided to tie of at a bridge piling and do a little fishing so the trip wasn't such a bummer. fished for a couple hours tried turning the key. nothing . adjusted the idle screw to get it at a higher rpm and she fired up. I ran her for half an hour at various speeds and she seemed ok. then at the dock in idle gear it starts kind of bouncing the rpms from 1100 to almost dead then dies. I'm at a loss. I cannot afford a mechanic. Sorry for the long story I just did not want to leave anything out that might suggest where the problem lies(maybe myself). If anyone could please help me I would appreciate it alot.

Probably not the right thing to do but, I'm posting to get this back to the top in hopes that somebody may read this.
