I am relatively new to boating and servicing my 02 Bayliner Capri 185 with Mercruiser 3.0 and Alpha Sterndrive. My trim up switch was not working, but trailer switch and trim down was. After troubleshooting, I determined that trim limit switch was WAY out of adjustment. I followed my Seloc service manual to adjust both trim limit switch and trim position sender unit. Now when the drive is bottomed out Down, my trim gage read all way down, but when trim up stops at 20 3/4" cylinder measurement, gage reads at 3:00 position to the right. It only goes higher when trailer button is pushed go go up higher. It seems like it should use the entire range for trim up/down, regardless of trailer switch. Am I correct in this assumption, and is so, any suggestions to correct reading would be appreciated.

The gauge is just an indication, it's not absolue. From your description, that does sound like it's reading about right.

No, the trim gauge should be at 3:00 as you described. Otherwise, the gauge needle would have nowhere to go for the tilt range.
