I am not sure if it is the same in France, but here in the United States most manufacturers did not produce manuals for specific model boats. There would be a manual for the engine and stern drive, but not the boat hull and fittings. Restoring boats to original looks is not the same as vintage cars. The value of the boat does not hold like it would for a car.
But you can find parts much like what would have been used on the boat when it was manufactured, and return it to a very nice condition.
