Making a gauge panel

I got a fish finder that i want to install in the gauge panel. I could easily just cut a hole and plop it in but i also planned to remove the depth gauge which would leave a hole. So what material would work best in making a panel for the fish finder and gauges? I thought about starboard but the white wouldn't look that good in my boat

You can get starboard in black, and I think gray also. I am doing my dash over, I'm using peel and stick carbon fiber layover. You can get that in lots of colors off Amazon.

I used a plywood base and installed a gauge template over it.
