"bent" as if angled from it's normal position, then the answer is: Possibly. "bent" as if it's perhaps a little twisted so not be straight as normal, then the answer is: Probably.
How much of a list? Does it list at anything besides wot on plane? Got pictures of the skeg?

Which way does it lean- port/starboard?
Is it level when moored?
Is this a new problem, or a new-to-you boat?

Short answer to your original question, yes that can do it. If it's worked fine for years (to arg's point) and all of sudden started after you whacked the skeg, then you're probably hot on the trail.
If it's leaning kinda' all the time, and it's always done it ... We really don't have enough to go on.
you can also have the skeg welded easily enough.as for a bend if i was there i could fix it in about 2 wacks .not for the faint of heart or the inexperienced.i was taught well by a pro.has worked everytime ive done it.the actual purpose of the skeg is to protect the prop and gearcase.id fix anyway but id also look else wheres for you listing problem.possible damaged hull?incorrectly mounted motor?how bad of a list are we talking about?weight distribution ok?not saying the skeg may not cause issues but i had one and never noticed for years till my prop repair buddy pointed it out to me.must of been bad eyes on my part for sure.
do you have a hydrofoil on the lower unit?
