Hey Folks
I can't seem to get a decent edge on my knifes to save my life. What works best for you?
Thanks. :)

Re: Knife sharpening?

Sharpening any knife or anything else for that matter, is basically skill. You have to keep a constant angle while sharpening anything. And you have to do that equally from both sides. It helps to start with fast cutting stones (course grit) and work your way down to very fine grit stones keeping the same angle. Once sharpened that way it is really simple to touch it up now and then as well... If you are having a tuff time doing that, buy a sharpening system that makes you keep the angle while sharpening your knifes and blades. They have different angles you can select from and will make you hold that angle while going through the different grit stones to get your blades really sharp... GATCO system is one of those sharpening systems available at Cabela's Outdoors. But there are so many others too...

Re: Knife sharpening?

Depends on what the knife is used for....... My wife and I use this ACCU-SHARP Carbide Hand Held Knife Sharpener - AS-001 (015896000010) - Product Reviews and Prices - Shopping.com for a fast touch up and it works fine (even with serrated edges).

Hands down......patience and accuracy with a wet stone set does the finest job.

Then there is the paper sharpening wheel Knife Sharpening with paper wheels - www.paperwheels.com

CAUTION consider who else will handle your knives such as your wife, children and friends....... WARN them when you sharpen them.

A 1" belt sander 30" or 42"...harbour Freight has a good enough one for under $40-, and a selection of belts Sharpening/Sanding Belts - Lee Valley Tools

Get the grinding belts...maybe 500x and 1200x, and a leather one as well.
Be careful about blade orientation when using (ESPECIALLY with the leather one)... have the edge of the knife oriented away from the direction of belt travel so that it cannot dig in and catch.

With a bit of practice you'll be able to sharpen a knife in 60 seconds and shave with it.
