All due respect Mr. J&Mtackleguy, but I'd almost rather eat a Jack Crevalle.. :p However, I'm open to all recipies anyone wants to throw out there... :)

I agree with you about the bluefish<br />Here is that kingfish recipe.(At least we like here down south)<br /><br />1. Take 2 Kingfish fillets and place them in large glass pan.<br />2. Pour on Kraft Italian Dressing and allow to soak (Placed in Fridge) for about 30 minutes.<br />3. Cover in Italian Breadcrumbs and 1/2 cup of Parmesean Cheese.<br />4. Grill on hot charcoal grill approx. 4 minutes per side

Hehe he's definatley right about the bluefish. We catch tons of them while trolling for tuna and they are just junk fish. Sometimes leave one dragging in the spread to raise tuna or slice it up for a mako bait. <br />You can make a fair fish chowder from blues but as far as cooking and eating the flesh well it's definatly a pine board fish. Especially the big 10 to 20 lb ones we catch offshore trolling. Probably about as tastee as a tarpon :p I hear the snook are tastee ?

I think Kingfish is really strong too.<br /><br />It has to be eaten same day as catch #1. I ball the fish, dip it in yellow mustard and seasoned cornmeal and deep fry. It dosen't taste fishy at all. :)

Thanks all.. I've tried grilling and frying fresh kings with various marinades, including italian dressing, orange and apple juice, battered in cornmeal too.. Still a real strong taste.. Cheeze/dairy stuff is out of the question in my case.. (severe allergy)<br /><br /> Badger, snook are absolutely great, definately one of my favorites.. One note about snook, and I don't know if this is 100% true, but it's what i've been told... Make sure to remove all the skin on the fillet or it may taste a bit like soap...<br /><br />Anyone ever make fried cuda nuggets? Their kinda hard to make fingers, so just make em' nuggets.. Small inshore/nearshore little sport model baracudas, say less that 24 inches or so in size, are some fair eating fish.. <br /><br /> Baracuda don't necessarily mean ciguatera poisoning, hack-phut! an phoooey! You can get that from any reef fish...

I have to take issue with those of you who say blue fish are inedible junk fish. For my money nothing beats fresh fried bluefish (2lbs or less are the best IMHO), fresh being the operative word. Forget it if you kept the fish in a bucket for 6-8 hours, or if you try to freeze them before eating. Under those conditioins I would agree with your assessment. Fillet the fish, remove the dark streak running the length of the fish, dredge in buttermilk, then flour/cornmeal mix w/ salt & pepper to taste. Nothing finer.

Oh, as far as kings....<br /><br />cut them into 1 1/2-2" steaks, marinate in italian dressing and cook on the grill. That's the best way I know to eat them. Kings need to be eaten fresh too.

Hot sauce!!! Lots and lots of hot sauce. Oh yeah just when you think you put enough on, add a little more hot sauce. Soon they wont taste fishy anymore. :D

In CT., we catch mostly bass and blues. The best way to prepare a blue is to maninate the fillets in vinegar for 60 minutes, shake dry, and cover with cornmeal, place on a cedar shingle saturated with bourbon, place in oven at 300 degrees for one hour. When done, throw away the fish and suck on the shingle.<br />Stalker

Blues are about my favorite table fair. I have caught 13 pounders in the surf of OBX, cleaned them immediately which is the key, frozen them and eaten them 12 months later. Just as good as the fresh ones. We grill them with no marinate, just Old bay, paprika, butter, lemon, salt and parsley. Yum, Yum... :)
