To move the center of gravity back and give the motor more leverage to lift the bow. By moving the motor back the prop may run in cleaner water giving the prop better bite and run more efficiently. Raising the motor creates less drag this may result in an increase in RPM and Speed. Set up is everything, as others like Dhadley will tell you.
I put a jack plate on my boat this spring, the difference was like night and day (Better).
I hope this helps, if you give your current set up some of knowledgeable more knowledgble readers can give you some tips and possible expectations.

Thanks Muchco. I have a 2001 Stratus 468 with a 115 rude on it and it runs about 55 mph with just me and i have a 10" & 5" jack plate and thought about putting it on this boat but wanted to get some advise before doing it. So it will help on speed. I had to play with the last one a little until i got it set just right and i could tell a big difference in how it handled also.I just started moving it up about a 1/4" at a time until i got it right but not to high that i would loose water pressure.

i can tell you Stratus boats dont like more then 6 in of setback so i would go with the 5 as i recall i started with the center of the prop 3 in below the bottom and went up from there keep eye on water pressure at all times
