Jack Plate Question

I have a 1994 Nitro 2000DC. It's a 20ft boat with a 175hp EFI Mercury that was just rebuilt about .015 over pistons. I am debating on installing a Jack Plate. I was wondering if anyone out there had a similar set up and if so, did you notice a difference like higher top speed, easier take off, and shallow water take off. I am not sure what set back to use. Either a 6" or a 10". Any advice would be greatly appreciated. Thank you
