How much water should drain out?

I drained my block, manifolds, water pump hose, and steering cooler hose today and got a about 2.5-3 gallons of water out and let is sit a few minutes to drip. Poked 'em all with stiff wire. I know the cooling system capacity is more like 4 gallons but I assume some drains out when the system is not circulating water through the cooling system. Is this about right for this engine?

I would say that would be good, especially if you poked that wire and wiggled it around in ALL of the drain holes.
