How do you identify types of Flounders?

In New York there is a great difference in Flounder season by specis.
How can I tell a "yellowtail" from a "winter" flounder? There is also a "summer" flounder which is also known as Fluke. A fluke has teeth and a hinged jaw.

The internet is of course a great resource but possibly your fish and game has fish identification charts.

If you hold the fish belly down, head pointing away from you, a Fluke will have it's eyes on the left side. A Winter Flounder's eyes will be on the right side.

Down here along the Texas Gulf Coast there is only two kinds of Flounder. The kind you catch, and the kind that got away!
