How do you create that great Rooster tail..?

I have a 1978 Checkmate w/a Ford 460..How do you create that great rooster tail?

If your boat is a jet drive, there was an attacment added to some berkeley jets called a jet-o-vator that added a vertical swing to the outlet that would prodoce the long rooster tails. I have also seen some item on ebay from time to time that attached to the bottom of the boat by the transom that would redirect a stream skyward.
